2022 Thibaud Boudignon Anjou Blanc
Thibaud Boudignon’s Anjou Blanc is produced exclusively from 100% Chenin Blanc sourced from vineyards in Anjou planted at high density on shallow soils of grey schist and rhyolite (including siliceous and volcanic rock elements). The vines, averaging 35 to 40 years of age—with some vineyards in conversion to biodynamic practices from organic methods—contribute to the wine’s distinctive sense of terroir. Following harvest, the grapes are pressed and vinified separately using a combination of tanks and barrels of varying capacities (500L, 350L, and 228L, with 20% new oak), and fermentation is conducted with indigenous yeasts without malolactic fermentation. Additionally, vinification decisions are deferred until the complete harvest is achieved, underscoring a careful and deliberate approach to production.

Fermentation

Aging
The wine is matured on lees for 15–18 months in oak barrels—either a combination of 300L to 750L barrels with 30% new oak or 500L, 350L, and 228L barrels with 20% new oak—to add complexity.
