2023 Alice et Olivier De Moor Bourgogne Aligote
This is a blend combining 75% from the 2023 vintage with 25% from the 2022 vintage. The wine comes from 3-4 estate parcels in and around Courgis that the de Moors planted beginning in 1995. The de Moors have farmed their vines organically since 2005. The fruit is destemmed, gently pressed and fermented spontaneously with indigenous yeasts, with parcels vinified separately. The wine undergoes malolactic fermentation and is aged on its lees in a combination of used Burgundy barrels, 2500-liter foudres, and enamel-lined steel tanks for close to a year. Bottling is without fining or filtering, with sulfur added only at bottling.

Hand harvested, destemmed, gently pressed using pneumatic press, all cellar work done by gravity with gentlest possible treatment of grapes
Fermentation
Spontaneous fermentation with indigenous yeasts, parcels vinified separately, undergoes malolactic fermentation, no SO2 used at harvest or during vinification
Aging
Aged on lees for 11-12 months without bâtonnage or racking in a combination of used Burgundy barrels (228 liter), demi-muids, 2500-liter foudres, enamel-lined steel tanks, fiberglass tanks, and anforas, bottled without fining or filtering with sulfur added only at bottling
