2023 Alice et Olivier De Moor, Chablis L`Humeur du Temps
L'Humeur du Temps translates to 'The Mood of the Times' or 'The Mood of the Weather,' capturing a global snapshot of the vintage rather than a single vineyard expression. This Chablis comes from four estate parcels around Courgis (Côte de l'Etang, Les Envers de Côte Chétif, Les Goulots de Jouan) that are vinified separately then blended. The vineyard sits in highly calcareous soil formed millions of years ago in a warm, shallow sea, rich in shellfish fossils. The winemaking philosophy emphasizes simplicity: hand-picked grapes fermented without additives, aged twelve to sixteen months, and bottled without fining or filtration. The label was drawn by winemaker Olivier himself.
