2023 Belliviere 'Premices' Jasnières Coteaux du Loir Blanc

Prémices is Domaine de Bellivière's entry-level Chenin Blanc, a barrel selection of the most fruit-forward parcels from their Jasnières and Coteaux du Loir vineyards. The fruit comes from estate parcels with vines ranging from 10-50 years old, planted on flinty clay soils over tuffeau (soft limestone). Originally made from fruit in conversion to biodynamic farming, the wine now represents the most approachable expression as the entire estate is fully biodynamic. Fermented in old barrels using native yeasts, it typically finishes at a sec-tendre level of sweetness with integrated residual sugars that add complexity, though it can occasionally be fermented entirely dry. Starting in 2022, the wine is labeled as Coteaux du Loir to provide more flexibility in difficult vintages.

Farming

Certified biodynamic viticulture since 2011, organic farming from the start. The estate owns and farms 18 hectares across 60 parcels in 5 villages in the Jasnières and Coteaux-du-Loir appellations. Vines are sélection massale rather than clones, planted at a density of 9,300 vines per hectare, gobelet-trained on flinty clay soils over tuffeau (soft limestone). Meticulous soil work with minimal intervention, avoiding chemicals, additives and technology. Grapes are hand-harvested, sometimes in multiple passes if the vintage is suitable for botrytis.
 

Harvest

Hand-harvested grapes are direct-pressed over seven hours into tank where juice settles overnight, then moved by gravity into barrel.
 

Fermentation

Conducted with native yeasts and minimal sulfur in barrels of various shapes and sizes; each parcel is vinified individually; fermentations are never pushed and often stop short of dryness in the cool cellar and climate, with the winemakers embracing a philosophy of letting nature decide the final dryness level of each vintage; wine goes through malolactic fermentation.
 

Aging

Aged in old barrels for about one year without temperature control in traditional tuffeau limestone cellars, followed by 9 months in bottle; Prémices specifically is fermented and aged in old barrels; the winery uses gravity-fed winemaking in their modern facility built in 2015.
