2023 Casale del Giglio Censanese

Produced from Cesanese, an indigenous grape of Italy's Latium Province of Frosinone. This deep ruby red wine is crafted from a late-ripening variety with a history rooted in the region. The wine contains 50 to 75% sun-dried grapes and was aged in used Austrian Cherry Wood barrels. This winemaking approach yields a wine with persistent tannins and pronounced acidity, essential criteria for long aging potential.

Farming

Certified Organic. Spur-cordon trained vines at 500 metres above sea level with volcanic limestone soil, facing east. Vines are 30 years old.
 

Harvest

Late harvesting in late October due to high, hilly slopes of the vineyards
 

Fermentation

Cold maceration for 6-7 days at 8°C; submerged cap, spontaneous fermentation with indigenous yeast at 18-20°C for approximately 20 days with repeated punching down, followed by 10-12 days of maceration on the skins to extract tannins
 

Aging

After racking, half aged in stainless steel vats and half in oak tonneaux (400 liter casks) for approximately 12 months; portion aged in used Austrian cherry wood barrels
