2023 Clos du-Tue-Boeuf Sauvignon Qvevri
Clos du Tue-Boeuf, a historic estate in the Loire region, produces an innovative white wine that fuses French winemaking with Georgian traditions. Made from organic Touraine Sauvignon Blanc grapes, the wine is crafted using traditional qvevri—Georgian terracotta vessels—in which the grapes undergo four weeks of skin contact. This is followed by an eight‐month aging period with indigenous yeasts and lees, and the wine is bottled unfiltered with minimal sulfur. The production methods, which echo techniques once employed at royal tables in the Middle Ages, also impart a green, flinty character reminiscent of wines from the Cheverny appellation. The estate, managed by Thierry and Jean-Marie Puzelat since 1996, adheres to organic practices while melding advanced French practices with time‑honored Georgian techniques.
