2023 COS Frappato
COS Frappato is a natural red wine produced exclusively from the indigenous Frappato grape in estate vineyards of the Vittoria appellation in Sicily. The vineyards benefit from distinctive limestone and red clay soils that contribute to the wine’s character. Winemaking practices embrace minimal intervention and traditional techniques—employing spontaneous fermentation in concrete vats and, in some cases, aging in clay amphorae—to preserve the grape’s authentic expression. Established in 1980 and led by pioneering winemaker Giusto Occhipinti, COS is committed to organic and biodynamic practices that honor Sicily’s rich viticultural heritage and the unique terroir of the region.

Aging
Fermentation products are aged in varied vessels—including 440‑liter clay amphorae, large neutral botti, concrete vats, and cement.
Some batches are aged for 9 months in concrete vats with an additional 3 months in bottle in the cellar.
Minimal SO₂ is added throughout aging.
