2023 COS Frappato

COS Frappato is a signature wine from Azienda Agricola COS, a pioneering natural winery founded in 1980 in Sicily's Vittoria appellation by Giusto Occhipinti, Giambattista Cilia, and Cirino Strano. The estate practices organic and biodynamic farming on distinctive limestone and red clay soils. This wine is made from the indigenous Frappato grape using minimal intervention techniques, including spontaneous fermentation with indigenous yeasts and aging in clay amphorae and concrete vats. COS was among the first in the region to embrace natural winemaking and is renowned for using clay amphorae, honoring ancient traditions. Giusto Occhipinti is considered a benchmark producer in Sicily and a critical figure in Italian winemaking. The wine is best served with a slight chill, as is traditional in Sicily.
