This Hautes-Côtes de Beaune Blanc is produced by Agnès Paquet, who reclaimed her family vineyard in Burgundy in 2000 and adopted organic farming practices. The wine is crafted from Chardonnay sourced from two lime-rich plots: young vines in Meloisey (La Lié) and forty-year-old vines in Baubigny, Sous le Château near Auxey-Duresses. Fermentation and aging take place partly in tank and partly in barrel, reflecting a contemporary winemaking approach that emphasizes fruit-forward purity and vitality while respecting Burgundian tradition. The high-altitude terroir of the Hautes-Côtes de Beaune imparts distinctive limestone-driven minerality and finesse to this ageworthy white.
