2023 Domaine Cottenceau Montagny Les Preaux

A dry white wine from the Montagny Village appellation in Côte Chalonnaise, southern Burgundy, made exclusively from Chardonnay grapes. Produced by Maxime Cottenceau, who established his domaine in 2018 and has been implementing organic farming practices since 2020. The wine is fermented in tank with aging on fine lees, sometimes in oak, adding roundness and complexity while preserving fruit purity. The appellation's argilo-calcareous soils and southeast-facing slopes impart characteristic strong minerality, vivacity, and a perfect balance between structure and delicacy. Serve at 10-12°C and decant for at least 10 minutes in youth. This wine drinks well young and is ageworthy for 6-7 years.

Farming

Organic farming (in conversion since 2018, certified from 2020 vintage). Herbicides eliminated and replaced with plowing and soil cultivation. Natural viticulture following the lunar calendar. Tressage technique (flexible bending and interweaving of shoots) applied instead of traditional pruning to reduce vine stress, maintain photosynthesis, and promote even fruit ripeness and fine aromatics. Estate vines average 20 years old.
 

Harvest

Manual hand harvest using 25kg small crates to prevent fruit damage
 

Fermentation

Gentle pressing process lasting at least three and a half hours with only three stirrings to ensure low temperature pressing and bright acidity; fermented on indigenous yeasts in temperature-controlled tanks and Chassin barrels (30% new)
 

Aging

Since 2020, no clarification step is used before barrel aging for purer wine texture and better terroir expression; aged on fine lees in tank for around 18 months and in Chassin barrels for 14 months plus 6 months in tank
