2023 Domaine Tournelle Arbois Rouge L'Uva Arboisiana Plousard
100% biodynamically cultivated Ploussard grapes, grown on early Jurassic grey marl clays in the Jura region (including the Arbois appellation), are carefully hand-harvested, sorted, and destemmed. The wine undergoes a carbonic maceration process—employing either full or semi‑carbonic techniques—for roughly one month before being devatted into separate tanks. A short élevage period follows, with some batches receiving additional treatment through malolactic fermentation in temperature‑controlled stainless steel tanks using native yeast or a 6–12‑month aging in neutral oak barrels. Bottling is executed unfined and unfiltered, with no added SO₂ throughout production, culminating in a wine of approximately 12% ABV.

Grapes are hand‐harvested (in trays or the vineyard), sorted, and lightly destemmed (vendaige éraflée).
Fermentation
Maceration & A 1‐month carbonic maceration (full or semi‐carbonic) is conducted in cylindrical open vats saturated with carbonic gas. After maceration, devatting separates must for fermentation, which is carried out spontaneously using indigenous yeast. Alcoholic and malolactic fermentations finish in tanks or cuves, including temperature‐controlled stainless steel vessels, with natural carbonic gas (900–1200 mg/l) preserved.
Aging & Bottling: Postfermentation, wines undergo a short élevage or rest in large neutral oak barrels (foudres) for 6–12 months. Bottling occurs in the spring without fining, filtration, or added sulfites/SO2, and products are maintained at 14 °C.
