Certified organic and biodynamic cultivation, hand harvesting in small baskets, manual sorting and destemming at the vineyard, no additives, no sulfites added

Hand-harvested in trays, hand-destemmed in the vineyard, sorted grapes
 

Fermentation

Carbonic or semi-carbonic maceration for 1 month in cylindrical open vats saturated with carbonic gas, use of indigenous yeast, devatting after maceration, spontaneous alcoholic and malolactic fermentation completed in temperature-controlled stainless steel tanks, no added sulfites
 

Aging

Rested in large neutral oak barrels (foudres) for 6-12 months, bottled unfined and unfiltered with no additional SO2, preserving natural CO2 (900-1200 mg/l) for freshness, stored and transported at 14°C
