2023 Envínate Valle de la Orotava "Palo Blanco"

Palo Blanco is a monovarietal white wine crafted exclusively from 100% Listán Blanco grown in century‐old vineyards in Tenerife’s Valle de La Orotava. The vines, which include cordon trenzado plantings and extend across La Orotava, Los Realejos, and surrounding towns, are established on volcanic soils at elevations ranging from approximately 400 to 600 meters. Hand‐harvested grapes are pressed as full clusters off the skins and fermented in concrete vessels without malolactic conversion. Aging is conducted for 10 to 12 months in either Oak barrels or 2500‐liter Friulian oval foudres, and the wine is subsequently bottled without fining or filtration.

Farming

Organic practices with no chemical inputs are employed using manual harvesting, on-vine grape selection, traditional cordon trenzado training, and foot-treading of grapes. The Envínate project emphasizes a natural production style.
 

Harvest

Hand-harvesting with whole‐cluster (or entire grape) processing and 1–2 days of maceration, followed by full cluster pressing.
 

Fermentation

Alcoholic fermentation is conducted with indigenous/native/autochthonous yeasts in concrete tanks without temperature control; malolactic fermentation is omitted (with SO₂ adjustments where noted, e.g., 35 mg/l).
 

Aging

The wine is aged for 10–12 months using a combination of concrete, large oval oak foudres (including 2500 L and 500 L French oak barrels), and used barrels, with some maceration taking place in oval oak barrels; bottling may be executed without sulphites, fining, or filtration.
