2023 Ganevat Cotes du Jura Plein Sud Trousseau

This red wine from Jura is crafted exclusively from Trousseau grapes. The fruit is sourced either from Domaine GANEVAT’s own vineyard or via negoce, with vines aged between 15 and 60 years planted on a steep, south-facing hillside characterized by white marl, scree, and gravel soils. The production process features intracellular fermentation followed by a gentle maceration, and the wine is aged for one year in a truncated cone‐shaped vat. Produced at the family‐run estate—whose history dates back to 1650 and which has been certified biodynamic since 2014—this wine reflects a meticulous focus on terroir-driven expression and traditional winemaking techniques.

Farming

Fermentation

Vinification employs indigenous yeasts with intracellular fermentation followed by gentle maceration; for reds, carbonic maceration is applied. The must is neither fined nor filtered, preserving a natural slight perlage with decantation recommended before service.

Wines are aged for 1 year in truncated cone–shaped vats, with red wines alternatively aged in neutral barrels.
