2023 Ganevat Encore
A red blend primarily composed of Gamay from Fleurie on pink granite soils and Pinot Noir from Jura, co-fermented in oak vat. Made naturally without added sulfites using wild yeast fermentation. The 2023 vintage was notably warm, producing an atypical wine that shows deeper color, more weight and concentration compared to previous releases. The wine displays more terroir expression and structure than earlier vintages, with deliberate retention of dissolved carbon dioxide for protection. Production of 4,000 bottles.
