2023 Ganevat Grusse en Billat Ponot Noir
This Pinot Noir from the Côtes du Jura is sourced from the En Billat parcel in Grusse and Saint Laurent La Roche, planted on schist and marl soils with southeast exposure. The wine is hand-harvested and vinified with minimal intervention: predominantly whole-cluster fermentation, cold pre-fermentation maceration, native yeast fermentation, and no added sulfur. It is aged one year in barrel in a cold, reductive cellar. The wine is crafted for aging and benefits from decanting upon opening, reflecting the Ganevat family's long tradition in the Jura region and their biodynamic farming practices.
