2023 Ganevat Grusse en Billat Ponot Noir

This 2023 Pinot Noir is sourced from vineyards in the Jura region—specifically from Grusse and Saint Laurent La Roche, including the “En Billat” parcel within the Côtes du Jura appellation. The vineyards are situated on schist and marl soils, with certain sites benefiting from biodynamic practices and southeast exposure. Harvesting is carried out manually, often with the grapes largely kept whole (non‐égrappée), and the must undergoes a cold pre‐fermentation maceration. Fermentation is conducted naturally with indigenous yeasts, without fining, filtration, or added SO², in a cold, reductive cellar environment. The wine is then aged for one year in oak, a process that, alongside its precise vinification methods, supports its potential for further development.
