2023 Gauthier Jour de Soif

Bourgueil Jour de Soif is an estate-produced Cabernet Franc from the Bourgueil appellation in the Loire, France. The wine is crafted from 20‐year‐old vines grown under organic practices on a distinctive terroir composed of approximately 60% gravelly soils and 40% clay or clay–limestone soils; some production also benefits from historic tufa caves used in the aging process. The winemaking approach emphasizes lighter intervention and minimal manipulation, producing an entry‐level, unmanipulated cuvée that is designed for early enjoyment while retaining the structure necessary for additional development.

Farming

Vines are planted in gravelly soils (60%) and clay soils (40%) and are maintained using certified organic practices (Ecocert) and organic viticulture. Techniques include organic and natural farming methods, hand pruning, hand picking, green harvesting for low yields, cover cropping, bud-pruning, and yield limitation.
 

Harvest

Fully destemmed and sorted grapes—including organically grown fruit and selections from younger vines (approx. 20 years)—are used. Some batches undergo a cold pre‐fermentation maceration (ranging from 4 days to extended periods) to facilitate skin infusion.
 

Fermentation

Traditional fermentation is carried out using indigenous/native yeasts in stainless steel, concrete vats, or 600‐liter demi-muids. Techniques include gentle vatting with controlled pumping over for approximately 8 days, concurrent alcoholic and malolactic fermentation in certain processes, and strict temperature control to preserve fruit characteristics.
 

Aging

Wines are aged on fine lees—either for 6 months or until bottling the following spring—using stainless steel tanks with minimal oak influence or, for select cuvées, in 600‐liter demi-muids with a varying percentage of new oak. Minimal SO₂ is added at bottling.
