2023 GD Vajra Dolcetto

G.D. Vajra winery, established in 1972 by Aldo and Milena Vaira with vineyard roots dating back to 1947, produces a 100% Dolcetto wine under the Dolcetto d’Alba DOC. The grapes are sourced from estate holdings—including Bricco delle Viole, Coste di Vergen (planted in 1979), Fossati (planted in 1985), and historically prime lands just above Nebbiolo vineyards—and are hand harvested. The winemaking process employs stainless steel tanks exclusively for maturation, a technique designed to preserve the purity and inherent freshness of the grape while honoring traditional Piedmont heritage.

Farming

Fermentation

An initial maceration phase—including water maceration—for approximately 25 days precedes fermentation conducted in stainless steel vats with indigenous yeast. Primary fermentation lasts about 15 days, followed by malolactic fermentation.
 

Aging

The product undergoes maturation in stainless steel tanks for periods ranging from a short duration to approximately 7–8 months, with additional bottle aging for several months using a no‐recipe method.
