2023 Giachino Persan

This wine is produced in Savoie at high altitude from a blend that includes local grape varieties—Etraire de la Dhuy, Gamay, and the rare Persan. The vineyard is established on clay‐limestone soils with southeast exposure and features vines averaging 20 years in age. Grapes are handpicked before undergoing whole bunch maceration for 2 to 5 days. Vinification is carried out in vats, with an 8‐month aging period, and the wine is crafted following organic, biodynamic, natural, and low‐sulphur practices, consistent with vegan production methods.
