2023 Grosjean Montmary Metodo Classico

Montmary is a classical method sparkling wine produced from a blend of Pinot Noir and Chardonnay—60% Pinot Noir and 40% Chardonnay when specified. The wine is aged for 15 months on its lees and bottled with under 2 g/L dosage. It is crafted in tribute to the dominant Mont Mary, a mountain reaching 2815 m s.l.m located behind the winery, whose terroir plays a key role in shaping the character of the wine.

Farming

Manual and partly mechanical weed control is performed three times per year with harrowing and sowing on alternate rows. Fertilisation with bovine manure occurs every 5/6 years, and cryptogamic diseases are managed exclusively with copper and phosphate.
 

Harvest

Whole clusters are pressed with a few hours of maceration.
 

Fermentation

Alcoholic fermentation occurs in stainless steel tanks at low temperatures using selected yeasts, followed by a second fermentation in January under the Metodo Classico process.
 

Aging

The product is aged in stainless steel at 5–7°C, remaining on its lees for 15–18 months before disgorgement, and is bottled with under 2 g/L dosage in an Extra Brut style.
