2023 Herve Souhaut Cessieux Syrah
Hervé Souhaut’s Clos des Cessieux is a Syrah from the Saint-Joseph appellation in the Northern Rhône. The vineyard, planted about 25 years ago from clonal selection—and originally established on a 25‐year lease by Beatrice’s grandfather—now operates under organic practices initiated in 2013. Located on a historic, south‐facing site with rocky, granite and schist soils that exhibit minimal chemical retention, the vineyard best expresses its unique terroir. In the cellar, the wine is produced using whole‐cluster fermentation, semi‐carbonic maceration, and native yeast fermentation, with hand harvesting and minimal sulfites. Aging in neutral oak barrels further preserves the wine’s purity and balance, in keeping with the appellation’s AOC standards and the traditional practices of the Herve Souhaut production.

Fermentation
An extended, low‐temperature maceration is applied without destemming, using native yeast in wooden tanks. Techniques include whole-cluster and semi-carbonic maceration, with minimal oenological adjustments and low sulfite additions (total SO2 of 25 mg/L).
Aging
Fermentation products are aged on fine lees in oak—with second-hand oak casks or neutral oak barrels—for eight months before bottling unfiltered.
