2023 Herve Souhaut La Souteronne Gamay

This wine is produced from Gamay grapes sourced from 80‐ to 100‐year‐old vines grown organically just below the Hermitage hillside on a granite soil that reflects both Beaujolais and Northern Rhône influences. The grapes are hand‐harvested and sorted, and are processed using minimal intervention techniques. Depending on the batch, the winemaking method involves either whole cluster fermentation or a very long, low‐temperature maceration without de‐stemmming. Fermentation is followed by aging in large neutral oak vessels, secondhand oak casks, or stainless steel tanks, with the wine being bottled without fining or filtration and stabilized with 25 mg/L of SO2.
