2023 Il Saliceto Falistra Lambrusco di Sorbara
Lambrusco di Sorbara is produced exclusively from the classic local grape using a minimally interventionist approach. The grapes undergo a brief skin maceration that imparts a delicate cherry to light‐pink hue, characteristic of a rosato‐style wine. Primary fermentation proceeds in stainless steel with natural yeast, followed by a secondary in‐bottle fermentation initiated using a portion of the must from the original harvest. With only minimal sulfur added at bottling and no filtering or fining performed, the winemaking process preserves the integrity of the terroir and reflects traditional techniques.
