2023 Jonathan Pabiot Leon Pouillu-Fume

Léon (formerly known as Florilège) is the flagship Pouilly-Fumé from Domaine Jonathan Didier Pabiot, named after the winemaker's son. The first biodynamic-certified estate in the appellation, it is produced from mature Sauvignon Blanc vines averaging 30 years old, planted across three distinct terroirs: Kimmeridgian marl, chalky Portlandian limestone, and clay-silex on flint. The wine undergoes slow, cool native-yeast fermentation with minimal sulfur additions, followed by aging on the lees for 5-12 months in stainless steel and truncated-cone wooden vats. This approach yields an expressive, transparent expression of Pouilly-Fumé with remarkable mineral precision and textural depth.

Farming

Certified organic and Demeter certified biodynamic viticulture. Vines average 30 years of age, planted at 10,000 vines per hectare. Sustainable soil management with tractor passes 3-5 times annually to encourage deep rooting, followed by grass growth between rows at end of summer. Cover crops used to promote biodiversity and soil health. De-budding in springtime to increase quality and concentration. Hand harvesting yielding an average of 30 hectoliters per hectare. No herbicides or synthetic chemicals used.
