Grapes are fully destemmed and gently pressed before spontaneous fermentation with indigenous yeasts at 20-22°C in stainless steel tanks. The wine undergoes 4-6 months aging on fine lees with monthly battonage before gentle filtration and bottling in March 2024. The 2023 vintage experienced extreme drought conditions with temperatures 1°C above average, resulting in 50% reduced yields but concentrated acidity. Limited production of 3,398 bottles. Analytical profile: 10.81% alcohol, pH 3.22, 5.1g\/l total acidity, 44mg\/l SO2. The wine displays citrus fruits such as lemon and grapefruit with delicate hints of ripe pear, white flowers, and crushed rocks.
