2023 La Vigne di Alice Prosecco Brut Doro Nature

Doro Nature Brut Valdobbiadene DOCG is a single-vineyard, 100% Glera grower Prosecco produced from the historic Doro vineyard in the foothills of the Dolomites. The vineyard is farmed organically—eschewing herbicides and pesticides in favor of manual weeding and natural vegetation interspersed with the vines. After harvesting, the grapes undergo destemming, gentle hydraulic pressing, and a period of static settling before spontaneous primary fermentation with native yeasts. A pied de cuve is used to initiate secondary fermentation in stainless steel tanks set at 18°–20°C; this process, executed via the charmat method, is conducted over a period during which the wine remains on its lees for 60 to 90 days. No sugar additions are made, relying solely on the natural must to achieve the desired profile.

Farming

Fermentation

Following primary fermentation, lees aging is conducted for 60–90 days. Secondary fermentation is then performed by pressurizing steel tanks using the Charmat method, with refermentation for approximately 60 days at 18°–20°C.
