2023 Mar de Envero Blanco

Mar de Envero’s monovarietal Albariño is sourced from vineyards in the DO Rías Baixas subzone Ribeira do Ulla, where vines are cultivated at approximately 20 meters above sea level on sandy soils influenced by the Atlantic. The grapes, grown under low-intervention practices, are initially destemmed and gently crushed before undergoing a cold, low-temperature maceration with skins to optimize extraction. Fermentation is then carried out in temperature-controlled stainless steel tanks—with a natural increase in alcohol levels—and is followed by an extended aging period on the wine’s own lees (up to 9 months), a process that contributes to its structural balance and complexity.

Farming

Own vineyards are cultivated using low-intervention, Organic farming practices on sandy soils at 20 meters above sea level, with low sulphur use at bottling.
 

Harvest

Grapes are hand‐picked in small boxes (max 20 Kg) during the 3rd week of September, then destemmed and lightly pressed.
 

Fermentation

A pre-fermentative cold maceration is conducted to enhance varietal aromas, followed by alcoholic fermentation in stainless steel tanks at controlled temperatures, lasting around 7 days.
 

Aging

The wine undergoes aging on lees for 6–9 months in stainless steel, with subsequent cold stabilization using minimal sulphur additions.
