2023 Matassa Coume de olla VDF Blanc
This natural, organic, and vegan white wine is produced from a blend of Macabeu, Muscat d’Alexandrie, and Muscat Petit Grains, sourced from 45‐year‐old vines in a single vineyard—Coume de l'Olla—in Roussillon, France. The winemaking process features a two‐week whole‐cluster maceration (employing whole grape maceration without destemming) followed by gentle pressing and spontaneous fermentation with native yeasts, initially in stainless steel tanks. The wine is then aged on its lees and matured for up to eight months in concrete vats without filtration or added sulphites. The limestone and clay soils of the vineyard, along with these precise techniques, underscore its artisanal character and emphasize the regional terroir.
