2023 Matassa Rouge Coume de olla VDF

Produced exclusively from Grenache Noir, Grenache Gris, and Macabeu grown in the Coume de l'Olla single vineyard, this wine is sourced from 50+ to 55‐year‐old vines planted on clay and limestone soils rich in iron. The grapes undergo spontaneous co‐fermentation with maceration durations that include a shorter 3‐day period prior to pressing into concrete tanks for a brief elevage, while alternative lots benefit from an extended whole‐bunch maceration of up to 2 weeks followed by an 8‐month vat aging. Bottled unfined and unfiltered without additional SO₂, the winemaking process preserves the vineyard’s distinctive terroir and technical integrity.
