2023 Orsola Gavi

This wine is produced exclusively from 100% Cortese grapes cultivated in vineyards managed with organic and biodynamic practices. The grapes are grown on marl and silty‐clay soils at approximately 300 meters above sea level and are hand‐harvested in small crates. They are immediately pressed—often using a pneumatic press—and then fermented in temperature‐controlled stainless steel vats with indigenous yeast. The wine undergoes fining (vegan‐friendly), filtering, and a minor sulfur addition before bottling. The production also reflects a long family winemaking tradition dating back to 1367, underscoring its historical and technical pedigree.

Farming
