2023 Stein Riesling Weihwasser Feinherb

Weihwasser is a 100% Riesling produced in the Mosel region from vines primarily sourced from the St. Aldegunder Klosterkammer vineyard near the old church in Alf, as well as from steep, blue slate slopes. The vineyard includes vines that are approximately 60 years old and benefit from slate soils. The wine is crafted in the traditional Feinherb style—with a barely off‐dry profile and low alcohol levels—and follows classic winemaking techniques such as hand‐harvesting, partial destemming, and fermentation in traditional 1000‐liter fuders under the guidance of Ulli Stein.

Fermentation

Fermentation occurs in old 1000‑liter fuders using a minimal intervention, hands‑off approach that preserves the natural Riesling character, balanced acidity, and controlled residual sugar. Traditional techniques—reflecting Mosel and Kabinett/Spätlese styles—emphasize dry, racy wines with zippy acidity.
 

Aging

Minimal cellar intervention is maintained throughout aging, adhering to time‑honored practices.
