2024 Archer Summertime Blanc

Farming

Organic (BIO certified) and biodynamic cultivation. Vineyard located at Chateaux in Chignin, exposed due west facing the Granier peak summit, planted on very shallow moraine soil. Soil worked with horses to limit grass competition. Green manures sown in winter and laid down in spring maintain soil freshness. Vines trained in Guyot. Bunches well-spaced allowing full maturity with very low yields.
 

Harvest

Hand harvesting in 15kg crates at full maturity; slow pressing of whole bunches without crushing
 

Fermentation

No debourbage due to juice quality; fermentation initiated by pied de cuve with indigenous yeasts; complete malolactic fermentation
 

Aging

Aging on lees in tank and in 5-10 year old oak barrels for 11 months; filtration at 0.65 micron after bentonite fining; direct bottling under nitrogen; premium micro-agglomerate cork closure; zero grams residual sugar; total SO₂ 36mg/l, free SO₂ 12mg/l
