2024 Bott Frigyes Just Enjoy Red
A blend of approximately 90% Kékfrankos (Blaufränkisch) and 10% Olaszrizling, fermented separately using the layered Hamburger method (80% destemmed, 10% whole bunches, 10% juice) for 17 days before blending. This natural wine undergoes minimal intervention, with gentle maceration and complete fermentation leaving minimal residual sugar. The estate cultivates around ten hectares of vineyard on volcanic, clay-rich, limestone-infused soils on the south-facing slopes of the Muzsla Hills, imparting vibrant acidity and minerality. The wine is bottled unfiltered and unfined with a touch of fine lees, producing a medium-bodied expression with thoughtful winemaking that balances accessibility with natural wine character.

Hand harvested, combination of whole bunches (10-20%) and destemmed fruit (80-90%) using layered Hamburger method with whole bunches at bottom (trodden), middle untouched whole bunches, and top hand-destemmed berries or juice (10%)
Fermentation
Open vat fermentation for 14-17 days with gentle maceration, spontaneous native yeast fermentation with zero temperature control, separate fermentation of varieties before blending
Aging
Aged in used oak barrels on fine lees for 8 months, kept on fermentation lees without racking until bottling, bottled unfined and unfiltered with minimal sulfites added only at bottling
