Farming

Certified organic. Vineyards located on the eastern edge of Corsica overlooking the Tyrrhenian Sea, planted in clay and alluvial soils from Bravone River deposits and gradual erosion of slate mountains. Not irrigated. Cordon de Royat pruning with elimination of secondary buds to prevent excessive growth. Leaf pulling to promote ripening and aerate clusters. Yields maintained under 45 hl/ha. Vines average 25 years old with some pushing 35 years.

Harvest

Grapes undergo partial destemming before processing; gravity-fed winemaking throughout; pneumatic press used for gentle extraction.

Fermentation

Spontaneous natural fermentations with indigenous yeasts in temperature-controlled stainless steel tanks and old concrete tanks; three weeks of maceration in concrete tanks.

Aging

Red wines aged in large oak barrels (none new) for six to ten months; wines also spend short time in vat before bottling; minimal sulfur additions; unfiltered; unoaked options available.
