Farming

Organic certification achieved in 1971. Vines averaging 25 years old planted at 400 meters elevation on calcareous clay and marl soils in best exposed areas. Environmentally friendly agriculture with strain yield limitation. Hand-harvested. High elevation vineyards protected from thermal inversion, allowing for longer hanging period and full phenolic ripening.

Harvest

Hand-harvested from best-exposed sites in the first half of September

Fermentation

Gentle pressing; fermentation lasts approximately 15 days in temperature-controlled stainless steel tanks with a couple of punch-downs per day

Aging

Wine is racked at least twice prior to malolactic fermentation in stainless-steel vats; brief aging in stainless steel tanks only with no oak used; bottled in spring following harvest
