A 50/50 blend of Traminer and Cserszegi Fűszeres from the Úrráteszi-dűlő vineyard. The wine's name roughly translates to 'what makes you noble?' Cserszegi Fűszeres is a Hungarian grape created in 1960 by Károly Bakonyi, a hybrid of Irsai Olivér and Roter Traminer. The Traminer received 12 days of skin contact while the Cserszegi Fűszeres received 4 days. The cooler climate vineyard with high-chalk clay soil and high lime content amplifies the aromatics and mineral, salty character without dropping acidity. Bone dry and refreshing, bottled unfiltered with minimal SO2. Alcohol: 14.6%, Residual Sugar: 2.4 g/l, Acidity: 5.9 g/l.

Farming

Certified organic farming since 2016. Minimal spraying; last year only sprayed twice (sulphur, orange-oil, potassium-hydrogen-carbonate, amino-acid based biostimulant, humic-acid preparation). Deep tillage followed by healthy and diverse cover crops. Previously experimented with zero till for 4 years between 2015-2018 but found the volcanic soils too thick and dense. Grapes grown on south-eastern facing slopes with clay and andesite tuff soils.

Fermentation

Open vat fermentation; skin-fermented (héjon erjesztett) with 12 days skin contact for Traminer (10 days noted in one source) and 4 days for Cserszegi Füszeres; hand-based maceration with no pump overs or high-extracted punchdowns; basket pressed
 

Aging

Aged in tank; bottled unfiltered with minimal SO2 additions (approximately 30-60 ppm); no interest in high VA, green acids, or relying on extensive lees aging to add body
