Coenobium is produced at the Monastero Suore Cistercensi in Lazio using organically grown Trebbiano, Malvasia, and Verdicchio from vineyards established on volcanic soils in the Vitorchiano region. The grapes undergo an extended skin contact period during fermentation—from a brief 48 hours that approaches an orange style to durations exceeding 15 days—designed to enhance phenolic integration while preserving a balanced structure. Vinification is performed in a natural manner, with co‐fermentation conducted without added yeasts or temperature stabilization, and minimal intervention through an unfined and unfiltered process. The wine is aged on fine lees in steel and fiberglass tanks before bottling ahead of the next harvest, underscoring a winemaking approach that harmonizes traditional monastic practices with modern natural techniques.
