2024 Monastero Suore Cistercensi Coenobium Lazio Bianco

Coenobium is produced by the Cistercian order of nuns at Monastero Suore Cistercensi in Vitorchiano, Lazio, with guidance from renowned winemaker Giampiero Bea. A blend of Trebbiano, Malvasia, and Verdicchio grown organically in volcanic soils, this skin-contact white undergoes extended maceration. The wine is co-fermented without added yeasts or temperature stabilization, aged on fine lees in steel and fiberglass tanks, and bottled unfined and unfiltered just before the next harvest. Annual production is approximately 12,000 bottles. The volcanic terroir imparts distinctive characteristics to this naturally made, contemplative wine.
