2024 Monastero Suore Cistercensi Ruscum Lazio Bianco

Coenobium Ruscum Bianco Monastero Trappiste is an organic wine produced by the Cistercian nuns of Monastero Suore Cistercensi in Vitorchiano, Lazio. Sourced from vineyards established in 1963—with significant modern input from winemaking consultant Giampiero Bea—the wine is crafted from a blend of Trebbiano, Malvasia, Verdicchio, and, in some expressions, Grechetto. The production employs extended skin contact (approximately 14–15 days or more) and, in certain cases, a period of lees fermentation lasting two weeks or longer. Notably, the Coenobium and Ruscum variants—originating from the same harvest—differ in maceration time, with the Ruscum style receiving a distinct two‐week skin contact treatment. These carefully implemented vineyard, terroir, and winemaking techniques define the wine’s construction while allowing for vintage variations in style.
