2024 Occhipinti Bianco SP68
A Sicilian white wine is produced from hand‐harvested, organically (and in some instances biodynamically) managed vineyards planted at approximately 280 metres above sea level on sub-Apennine calcareous and red sand soils over limestone. The blend comprises primarily Albanello with Muscat of Alexandria (Moscato de Alejandría) in ratios such as 40/60, and in some expressions Zibibbo is also included. The grapes, some from 15‐year-old vineyards, are subjected to a 15‑day skin contact before undergoing fermentation with native yeasts and subsequent aging for 6 to 8 months in concrete (cement) tanks. This production protocol emphasizes a precise expression of the terroir and vineyard characteristics while maintaining minimal intervention during vinification.

Fermentation
Natural, spontaneous fermentation with indigenous/native yeasts is conducted in cement or concrete tanks, avoiding industrial yeasts. Skin maceration typically lasts 15 days—with daily pumping over and punching down—though extended maceration up to 155 days and a co‐fermentation approach (e.g., in 85 hl vats) are also applied.
Aging
The product is aged for 6–8 months in concrete/cement tanks—sometimes with aging on fine lees—followed by 1 month in bottle; clarification and filtration are omitted.
