2024 Occhipinti Rosso SP68

Occhipinti SP68 Rosso is a Sicilian red produced from a blend of 70% Frappato and 30% Nero d’Avola. Sourced from vineyards adjacent to the Strada Provinciale 68 near Vittoria, it benefits from terroir marked by medium‐consistency soils composed of sub-Apennine calcareous sands. The winemaking process includes extended skin maceration and fermentation in stainless steel tanks for approximately 6 months, with fermentation driven by indigenous yeasts and the wine remaining unfiltered prior to bottling. Produced under organic and biodynamic principles, this wine reflects both its distinctive vineyard characteristics and a commitment to traditional yet innovative techniques.

Farming

Organic viticulture is practiced using certified Organic and biodynamic methods, with grapes harvested manually and fermentations initiated by indigenous yeast. Green farming techniques are also applied.
 

Harvest

Grapes are primarily destemmed, with gravity‐fed juice management employed in some instances.
 

Fermentation

Fermentation proceeds solely with indigenous (natural/native) yeasts and occurs without temperature control in certain cases. A skin contact phase is applied, with maceration periods ranging from 15 days to as long as 155 days. Minimal SO₂ (or sulphur) is added before fermentation and at bottling, with occasional additional dosing after racking.
 

Aging

Fermentation and aging occur in a variety of vessels, including stainless steel tanks, concrete or cement tanks, and glass-lined tanks. Typical aging lasts 6 months in tanks (with one variation extending to 8 months), followed by 1 month of bottle aging; final bottling is performed without filtration.
