2024 Roccafiore Umbria Grechetto Fiordaliso

Fiordaliso is produced by Roccafiore, a young Umbrian winery founded in 2000 by the Baccarelli family in the rolling hills near Todi. The wine is made from 100% Grechetto di Todi, specifically the traditional G5 clone planted in 2004, which is deeper and more concentrated than other regional clones. Vineyards are rooted in distinctive white clay soils rich in limestone, calcareous marls, gypsum, and chalk. Grapes are hand-harvested in early September, destemmed, and undergo spontaneous fermentation in temperature-controlled stainless steel without yeast inoculation. The wine ages on fine lees in steel for six months, followed by three months in bottle before release. The winery focuses on sustainable farming practices.

Farming

Organic and biodynamic certified. The Baccarelli family farms organically, using organic fuels for tractors and maintaining sustainable practices. Vineyard consists of 15 hectares planted with Grechetto, Sangiovese, and small parcels of Moscato Giallo, Sagrantino, and Montepulciano. East/South-East exposure with white clay soils and calcareous marls. Guyot training system with 6,500 plants per hectare. Yields of 95 quintals per hectare.
 

Harvest

Hand-picked in early September, destemmed, gently pressed, cold soak before fermentation, natural settling of must for 12-24 hours

Spontaneous fermentation with wild yeast in temperature-controlled stainless steel tanks
 

Aging

6 months in stainless steel on fine lees, no malolactic fermentation, filtered but not fined or cold-stabilized, minimum 3 months bottle aging before release
