The style is leaner than expected, defined by its minerality, zippy acidity, and refreshing character that adds texture and depth. Often described as a rock star rosé with distinctive notes of crushed rock, crushed flowers, and crushed citrus rind—compared to a negroni grown in the hills, paler and lighter in the sun.

Fermentation

Grapes were foot-tread and gently pressed after about an hour of maceration for color; allowed to settle overnight followed by racking; native yeast fermentation in stainless steel with subsequent native malolactic fermentation
 

Aging

Aged in stainless steel for 5 months before bottling; unfined and unfiltered, with some sediment expected
