Farming

Sourced from a regenerative ranch in the Central Coast AVA that practices organic and regenerative agriculture, with CCOF-certified organic methods.
 

Harvest

Syrah and Grenache grapes are hand-harvested early for optimal freshness, with vineyard tasting conducted prior to processing.
 

Fermentation

After approximately 1 hour of maceration for color extraction, grapes are foot-tread and gently pressed, then allowed to settle overnight before racking. Native yeast fermentation is completed in stainless steel, followed by a native malolactic fermentation.
 

Aging

The wine is aged in stainless steel for 5 months and is bottled unfined and unfiltered, with some sediment expected.
