Natural wine from the Pijoan vineyard in Valle de Guadalupe, this field blend combines Syrah, Merlot, Grenache, and a small amount of Moscato Giallo. The small vineyard is managed with minimal intervention, emphasizing a balanced micro-ecosystem that promotes native and wild plant proliferation, functioning as a vermiculture system. Pelón is produced using spontaneous fermentation without additives or adjustments, and bottled unfiltered and unstabilized to preserve its natural character.
