2024 Vinos Pijoan Poubelle Sauvignon Blanc

Sourced from a small, organic (or young) vineyard producing 100% Sauvignon Blanc, this wine is crafted using a blend of traditional and minimal intervention techniques. It undergoes extended skin contact followed by spontaneous fermentation in oak barrels for approximately 8 months, with a deliberate exposure to oxygen during fermentation. This controlled oxidative process—developed with references to sherry production and methods traditionally associated with the Alsace and Jura regions—complements practices such as oak fermentation and limited skin contact. Current production includes the 2023 and 2024 vintages, reflecting a synthesis of time-honored winemaking with modern, naturally driven approaches.
