2025 Cellario Favorita

Dry, light-bodied white wine made from 100% Favorita, the local name for Vermentino in the Langhe and Roero regions of Piedmont. This old native vine is well suited to lean, sandy soils and was historically favored by King Vittorio Emanuele II, who gave the grape its regional name. Hand-harvested grapes are de-stemmed and pneumatically pressed, then naturally fermented in stainless steel. The wine is aged on lees through winter and spring, then bottled with minimal sulphur (~10ppm) without filtering or fining. Formerly labeled 'Snert' Langhe Favorita. The wine displays high acidity and low alcohol.

Farming

Organic (soon to be certified). Biodynamic. Grapes are grown on soils formed predominantly by marls and volcanic tuff, as well as lean, sandy soils. Vineyard work focuses on local, indigenous Piemontese grape varieties.
 

Harvest

Hand-harvested in early September into small bins; de-stemmed.
 

Fermentation

Pneumatic direct pressing without maceration; spontaneous fermentation with indigenous yeasts in stainless steel.
 

Aging

Aged in stainless steel tanks on lees from winter through spring; unfined and unfiltered; minimal sulfur at bottling (~10ppm); zero added sugar.
