Farming

Organic (not certified). Grapes sourced from domaine-farmed and purchased grapes. Hand-harvested. Vines range between 10 and 35 years old. Multiple vineyard sites in Berrie, Puy-Notre-Dame, and Montreuil-Bellay with varying terroirs: clay-sand soil over Turonian limestone in Berrie and Montreuil-Bellay, silty-sandy-clay soils over Turonian limestone in Puy-Notre-Dame.
 

Harvest

Grapes are whole-cluster pressed and gently settled for 24 hours before racking.
 

Fermentation

Slow, 3-week ambient yeast fermentation in stainless steel tanks; malolactic fermentation blocked by SO2 addition and low temperature to preserve natural acidity and freshness.
 

Aging

6 months on fine lees in stainless steel; tangential flow filtration applied before bottling with minimal sulfur (20-30 ppm SO2 added after pressing and adjusted after fermentation and before bottling if needed).
