2025 Domaine Comte Abbatucci Ile de Beauté Blanc "Faustine"

Produced from 40-year-old Vermentino vines cultivated biodynamically for over 20 years on granite soils in the hills above Ajaccio, Corsica. Jean-Charles Abbatucci's Faustine Vieilles Vignes reveals the purity of this grape variety and the finesse of its Mediterranean terroir. The wine is vinified gently and aged 6 months on lees, developing a delicate texture and complexity. Just as Burgundian Chardonnay expresses nuance of place, Vermentinu from Ajaccio's granite hills produces some of the island's most refined whites, with characteristic salinity born from its position between mountains and sea.

Certified organic and biodynamic viticulture (Biodyvin, Eurofeuille, Demeter EU). Vineyards cultivated biodynamically for over 20 years on granitic to sandy loam arenas with northern exposure. Flock of sheep grazes in the vineyards during winter and is managed with homeopathy. Horse plowing and control of winter grassing. Biodynamic cultivation with influence of phytotherapy practices.
 

Harvest

Manual harvest in crates with systematic sorting in the vineyard and cellar; direct pressing of whole bunches
 

Fermentation

Alcoholic fermentation in temperature-controlled stainless steel vats at 18°C using indigenous yeasts; static settling for 24 to 48 hours
 

Aging

Aged on fine lees for 6 months in stainless steel; natural tartaric stabilization by cold maintenance; light filtration at bottling if necessary
