2025 Monastero Suore Cistercensi Coenobium Lazio Bianco

Coenobium is produced by the Roman Catholic Sisters of the Order of Cistercians of the Strict Observance under the guidance of Giampiero Bea, with an approximate annual production of 12,000 bottles. A blend of Trebbiano (45%), Malvasia (35%), and Verdicchio (20%) co-harvested and co-fermented from Vitorchiano's volcanic soils in Lazio. The wine undergoes extended skin contact, then ages on fine lees in steel and fiberglass tanks. Bottled unfined, unfiltered, and with minimal sulfur, showcasing the volcanic terroir's distinctive smoke-iron minerality and notable saltiness.
