100% Albariño from small Alto Salnés vineyards with an average age of 30 years. Moraima is a small co-op of 11 friends and family members established in the coastal heart of Rías Baixas. They are one of only three bodegas producing wines strictly from the slightly inland portion of the area, Alto Salnés. This vintage features high acidity at 3.3pH and 7.7g/L total acidity, characteristics that contribute to its ageworthy nature and potential for long-term cellaring.

Grapes harvested at optimal ripeness in 15 kg crates with bunch selection at the vineyard; destemming and cold pellicular maceration at 4°C for 10 hours
 

Fermentation

Spontaneous fermentation; temperature-controlled fermentation in stainless steel tanks at 14°C; no malolactic fermentation
 

Aging

Aged in tank until bottling; 4 months on the lees; bâtonnage (higher than usual owing to the high acidity)
