The vineyards face north\/north-east, planted in 2004 on white clay and calcareous marl soils. Grapes are hand-harvested in early September from sustainable agriculture. The wine undergoes spontaneous fermentation in temperature-controlled stainless steel, then ages for 6 months on fine lees without malolactic fermentation, followed by a minimum of 3 months bottle aging. The bouquet features white flowers with attractive notes of pink grapefruit and green apple.
