2025 Sfera Macerato Catarratto

An orange wine produced from 100% Catarratto grapes with 17 days of maceration on the skins, resulting in pronounced tannins and high dry extract from the prolonged skin contact. This wine honors the peasant winemaking tradition of Marsala farmers, presented in a more evolved version of ancestral methods. The extended maceration allows for significant tannin extraction from the Catarratto grapes. Recommended serving temperature is 16-18°C, similar to red wines.

Fermentation

Natural fermentation with indigenous yeasts in the absence of selected yeasts, 17 days of skin maceration, minimal sulphur dioxide intervention with only 12 mg/l of total SO2 exclusively from natural production during fermentation, unfiltered
