Abe Shuzo Junmai Saké
ABE Sake is produced in Niigata Prefecture by a brewery with a 200‐year heritage currently led by Yuta Abe. Utilizing Niigata rice and traditional Junmai methods—with adaptations in rice polishing ratios similar to those used for Junmai Ginjo—the production emphasizes natural fermentation processes that allow each tank to develop its own distinct character. The process is sulfite free and is designed to capture the terroir of Niigata through careful control of fermentation, ensuring that the inherent properties of the rice and the regional environment are maintained. Temperature-controlled serving techniques are recommended to either highlight clarity and lightness or to enhance complexity and umami, reflecting a commitment to methodological precision and respect for traditional brewing philosophy.
